I was inspired by Ruby's dumpling dinner party on her blog, Cakies, so I followed her lead and made my own dumpling feast last weekend. Our favorite of the three recipes she shared were the gyoza. I even consulted the all-knowing YouTube for a tutorial on how to fold dumplings with fancy pleats. My dumplings no longer resemble a wrinkled ball of wax! Skillz, y'all.
Gyoza (Japanese Pork and Shrimp Pot Stickers
From Rasa Malaysia
2 cups napa cabbage
1/2 tsp plus 1/4 tsp salt
2 cloves garlic, crushed into a paste
1 tsp grated ginger
2 tbsp chopped chives
6 oz ground pork
1/3 lb shrimp, shelled, deveined, and chopped
1/4 tsp sugar
1/2 tsp black pepper
1 1/2 tbsp Japanese soy sauce
1 tbsp sake
1 tsp sesame oil
1 package gyoza wrapper (round)
In a bowl, toss cabbage with 1/2 tsp salt. Set aside for 15 minutes to draw out excess moisture from the cabbage. Drain in a strainer, and pat dry cabbage with paper towels to remove more moisture.
Transfer cabbage to a bowl and add garlic, ginger, chives, pork, and shrimp. Use a spoon to roughly bring all the ingredients together. Then add salt, sugar, pepper, soy sauce, sake, and sesame oil. Combine well.
Place 1 tbsp of filling in the center of a gyoza wrapper. Fold, pleat, and press to enclose the filling inside the dumpling. (Check out this how-to video on folding dumplings.) Place dumplings on a sheet tray lined with parchment.
Heat a non-stick skillet over medium high and add 1 1/2 tbsp canola oil. Add dumplings one at a time, placing the dumplings with sealed edges up. Fry for 1-2 minutes until the bottoms of the dumplings are golden brown.
Add 1/4" depth of water into the skillet and cover immediately with tight fitting lid and lower heat to medium. Steam for about 76-8 minutes. Transfer dumplings to a serving plate and serve with dipping sauce.
*For a simple dipping sauce, mix together 1:2 parts soy sauce and rice vinegar. If you'd like, you can add a dash of sesame oil, chili oil or toasted sesame seeds. Adjust and season to your taste.
